Mexican Food: The Ultimate Cookbook is a beautiful and thorough collection of recipes drawn from the many rich traditions of Mexican cuisine and inspired by contemporary influences.
"Collaborating with Gabe was an inspiring process for me as an artist. I learned so much while creating this piece, from the nixtamalization process to the rich history of landrace corn. The final addition of incorporating the Mexican flag colors into the ground corn was one of those "cherry on top" kinds of moments that I'll never forget. I can't put into words how fulfilling commissions like this one can mean for not only the owner but the artist as well, I can only hope to make more connections and collaborations as impactful as this one in the future."

In the year 2023, Gabe joined forces with Urbanspace Hospitality to launch Bacalar on Austin, Texas' renowned Rainey Street. Bacalar features a culinary experience influenced by the coastal and inland areas of the Yucatán peninsula, tracing Chef Gabe's familial roots.
Adjacent to Bacalar stands Tomaló, a walk-up taqueria that offers a daytime menu featuring breakfast tacos, aguas frescas, and other delightful options.

The Best of Tex and Mex
Gabe is elevating the Tex-Mex experience with his new concept, Ometeo, located in Virginia. Although well-versed in both Mexican cuisine and Texas cooking, this marks the debut of his ventures uniting the two culinary traditions.
